I have had some success! My peppers albeit small are edible and a little sweet considering they are still green, so I decided to toss them in to an Herbed Bulgur-Lentil Pilaf
I usually don’t include pictures because I don’t have a working camera… hopefully coming soon. But I decided to take advantage of the built-in features my Mac has to offer… Photo Booth. It was quite difficult to try and angle my laptop to take the photos, so please excuse the subpar lighting and composition, not that I am any better with a proper camera!
Here are the ingredients prepped and the lentils gently simmering.
The bulgar on the stove top and the onions in peppers in the skillet.
Voila the finished dish garnished with a sprig of mint.
I made this for lunch for my daughter and myself, but I have to say it was rather dry. It needed something to balance the lemon juice and the herbs. It reminded me a little of tabbouleh, so maybe a fresh diced tomato to add some moisture and a touch of sweetness. I am not sure I will make it again, but for me it is an easy go to dish because most of the ingredients I always have on-hand. Give it a whirl and let me know what you think!
